Cherry-almond baked oatmeal [Recipe]

Try out this easy recipe that you can take your time to put together in the evening and have it ready to go by morning.

You must have heard at one time or the other, if not more, that breakfast is the healthiest meal of the day.

Fact is, even when you eat a heavy meal in the morning, its less likely to bring on an attack of calories because you have more time during the day to burn it off as opposed to eating a heavy meal at night.

Sadly, most Nigerians assume skipping breakfast is the right way to keep fit.

If you are one of those, you would be terribly wrong.

As for those that skip breakfast, purely because there's simply no time to whip something up, this is for you.

It is both healthy and a great freezer meal too.

Recipe

Ingredients:

  • 1 1/2 cups old-fashioned oats
  • 1/3 cup dark brown sugar
  • 1/2 teaspoon baking powder
  • 2 teaspoons cinnamon
  • Pinch of salt
  • 1 cup chopped almonds
  • 1 cup dried cherries
  • 1 1/4 cups milk
  • 1 egg, lightly beaten
  • 1/2 teaspoon pure vanilla extract
  • 2 tablespoons butter, cut into small pieces

Directions:

1. Preheat the oven to 350°F. Lightly grease an 8-inch square casserole dish (or an 8-inch-long oval casserole dish) with nonstick spray.

2. In a large bowl, mix the oats with the brown sugar, baking powder, cinnamon, salt, almonds and cherries. Make a well in the center.

3. Pour the milk, egg and vanilla into the center and then mix to combine. Pour the whole thing into the prepared casserole dish and dot the surface with the butter. (The oatmeal can be made through this step and held in the refrigerator overnight.)

4. Bake until the oatmeal has absorbed all the liquid and the top is golden brown, 25 to 30 minutes. Serve warm.
