This delicious meal perfectly combines and balances sweet and savory tastes.
It is also a nutritious vegetarian meal that is very easy to prepare.
What you need:
- One cup of brown rice
- One package of organic tofu, cut into cubes
- One carrot, diced
- One tablespoon of freshly peeled and chopped ginger
- Two cloves of garlic, chopped
- One pound of celery, chopped
- Two cups of coconut water
- Three tablespoons of soy sauce
- One tablespoon of rice vinegar
- One tablespoon of olive oil

How to:
1. Boil the rice, ginger and coconut water in a medium saucepan.
2. Once it comes to a boil, reduce heat to low. Cover and let simmer until the rice is fully cooked. Set aside.
3.Whisk the soy sauce and vinegar in a small bowl. Set aside.
4. Heat the oil in a large skillet over high heat.
5. Add the tofu and stir-fry for about five minutes.
6. Add the carrot, celery and garlic. Stir-fry for five more minutes.
7. Add the soy sauce mixture and toss the tofu and vegetables till they're well coated.,
8. Stir in the rice.
9. Serve and enjoy.
