Raining season produce is always vibrant and fresh. This mostly-veggie (lime is the only fruit!) gem is full of health promoting antioxidants in the carotene family thanks to the red pepper and carrots. Lime not only adds a great flavor but phytonutrients with metabolism and immune supporting actions, like vitamin C, limonoids and even has some calcium. Enjoy while you still have access to these seasonal veggies.
Ingredients
2 carrots
3 celery stalks
1/2 red bell pepper (capsicum)
1 lime
Directions
Wash all produce.
Peel lime (optional).
Juice all ingredients well and enjoy!
If some of these ingredients are not available, you can substitute them for the following.
Carrots – sweet potato
Celery – cucumber
Red pepper – green, orange or yellow pepper, tomato
Lime – lemon, ginger
