Cocktail it with Tomato

Quick and easy, and a great way to make tomato juice when you don't have any of the "real" thing on hand! i would advice you use fresh tomatoes instead of tomato paste.

Ingredients

2 cups water

1 (6 ounce) of fresh tomatoes or can tomato paste

2 tablespoons lemon juice

2 tablespoons white sugar

1 teaspoon salt, or to taste

3 cups water, more if needed

Directions

Blend 2 cups water, tomato paste, lemon juice, sugar, and salt together in a blender until smooth; pour into a 1/2 gallon container. Stir 3 cups water into mixture. Refrigerate until thickened, about 1 hour. Add 1 more cup water if juice is too thick.

I don't even like tomato juice, but I found this delicious when I made it. This was very flavorful, and I'm looking forward to experimenting with different brands of tomato paste, including those with different herbs and seasonings added.
