We love potatoes (the Irish variety) for a bunch of reasons.
Asides their great taste, Irish potatoes are very healthy and contain more than a few nutrients such as vitamins B, C, potassium to name a few.
Potatoes can be eaten boiled, fried or like the potato ball recipe, in a rich potato ball.
Potato balls are relatively easy to make, simply
- Boil the potatoes first and when they're cooked, mash them with butter, a pinch of salt and black pepper into a fine mix,
- Next add 2 egg yolks and keep mixing, then cover and let cool in a refrigerator for about 2 hours,
- After time has passed, take it out of the refrigerator and roll into a ball with flour, then dip into beaten egg with a pinch of salt,
- After coating it with the egg, place into a bowl of bread crumbs and roll again,
- After rolling the entire mix, fry in olive oil but not for too long lest it bursts. Drain oil on a paper towel and it's ready to be served.
