A candy master showed us how to mould boiling sugar syrup into butterfly-shaped rainbow lollipops
It all starts with sugar syrup boiled to 155 degrees C. The sugar concentration can be mixed with flavours, colorants, and citric acid.
We visited London store Spun Candy for a masterclass on the process.
Batches of colour are separated and modelled on a heated surface.
Candy can be moulded into butterflies, frogs, or flowers to make lollipops.
